The redesign of hospital foodservices is increasingly driven to improve patient satisfaction and cost savings, but more recently to influence clinical outcomes including nutritional intake. With focus on evidence-based care principles foodservice model re-design can deliver improvements in patient outcomes as well as organizational efficiency and cost effectiveness.
In 2013 Mater became the first hospital in Australia to implement the innovative room service model, providing maximum patient choice from a restaurant style menu, at a time of patient’s choosing. Key outcome including nutritional intake, plate waste, patient satisfaction and meal costs all improved compared to traditional hospital foodservice models. Mater has subsequently received state and international innovation awards for this work.
Dietitians are ideally positioned to lead this innovative transition of hospital foodservice models given their skills across clinical dietetics, foodservice and research. This presentation will highlight the improved outcomes achieved through transition to roomservice and explore how dietitians can lead the redesign of hospital foodservices to deliver improved patient and organisation outcomes.
Speaker:
Sally McCray is the Director of Dietetics and Foodservices at Mater Group, Brisbane. She has worked clinically in a number of hospitals in the public and private sectors, in Australia and Canada. She was a key leader in implementation of Australia's first hospital room service model at Mater in 2013, 2015 and 2016 and has published this outcome research in international peer-reviewed journals. She is passionate about using technology and data analytics to help achieve improved patient clinical and organizational outcomes and advocates for dietitians with their unique skill set to contribute to achieving these. She holds an Honorary Associate Professor position at Mater Research Institute - University of Queensland and an Honorary Adjunct Assistant Professor with Bond University, Faculty of Health Sciences and Medicine.
