Food Intolerance Management for Dietitians Workshop
This online workshop is brought to you by the Dietitians Australia Tasmania Branch in collaboration with the Adverse Food Reactions Interest Group (2022).

This one-day online workshop hosted by the Accredited Practising Dietitians from the Royal Prince Alfred Hospital (RPAH) Allergy Unit, will outline the key steps of the RPAH Elimination Diet protocol, to provide a broad introduction to the management of food intolerances (chemical sensitivity) in adults.

The workshop consists of four sessions with the following key learning outcomes, where participants will:

Session 1: Food intolerance & elimination diets
- Learn the development of elimination diets in food intolerances
- Understand the food intolerance concept, including pathophysiology and symptoms
- Know the food chemical content of foods

Session 2: Nutrition assessment in food intolerance
- Learn the key aspects of Nutrition Assessment and Nutrition - Diagnosis for food intolerances within the Nutrition Care Process
- Know about evidence-based tests used to rule out other causes for symptoms

Session 3: The Diagnostic Elimination Diet & Challenges
- Know the key aspects to educating a client on the RPAH - - - Elimination Diet, and when it is appropriate to modify the protocol
- Learn how to monitor and evaluate clients’ responses, and how to troubleshoot when clients aren’t responding
- Understand the key steps in implementing the food Challenges

Session 4: Nutrition, liberalising & living with food intolerances
- Know how to personalise and liberalise clients’ diets following Challenges
- Recognise the key nutritional considerations for clients living with food intolerances

This workshop is suitable for APDs looking to upskill or refresh in food intolerance (chemical sensitivity) management in adults.

Speakers:

Dr. Anne Swain (Dip Nut & Diet, AdvAPD, PhD [USYD], Member Associations: DA, INDANA, ASCIA) is recognised as a leading expert in the field of food intolerance and food allergy, both in Australia and overseas. She has been the Head Dietitian at the Allergy Unit of Royal Prince Alfred Hospital (RPAH) in Sydney for over 40 years. Anne is co-author of the book Friendly Food and the RPAH Food Intolerance Handbooks. She has contributed to the development of policy and protocols for food allergy and food intolerance for NSW Health, FSANZ and other professional organisations. Anne is involved in research, education programmes, has scientific publications and is a University lecturer and mentor to students and graduated dietitians.

Brooke Scott (BSc, Hons Nutr & Diet, APD) is an Accredited Practising Dietitian with more than 14 years’ experience in the area of adverse food reactions. She works part time at the Royal Prince Alfred Hospital Allergy Unit seeing both adults and children, and at a private rehabilitation hospital in Sydney. Brooke has contributed to the development of the Friendly Food cookbook, Elimination Diet Handbooks, presented research at national and international conferences, mentors dietitians in food allergies and food intolerances and is the secretary of the Adverse Food Reaction Interest Group (AFRIG).

Dr. Kim Faulkner-Hogg (BSc, Grad Dip Nutr & Diet, AdvAPD, PhD [USYD]) is an Advanced Accredited Practising Dietitian with over 25 years’ experience with food intolerances. She trained at Royal Prince Alfred Hospital Allergy Unit, where she continues to work part-time, along-side her private practice in Sydney. Part of her PhD thesis was able to show food chemical intolerances were a possible reason for continuing symptoms in people with coeliac disease. Kim has contributed to the scientific literature, developed many recipes for those with food chemical sensitivities and contributed to the development of the RPAH handbook, recipe book and patient information. She mentors both student dietitians and dietitians upskilling in adverse food reactions.

Kirsty LeRay (BSc, Hons Nutr & Diet, BAppSc Ex&SpSc, APD, AN) is an Accredited Practising Dietitian who has been working in the area of adverse food reactions for the past 10 years. She practices at the Royal Prince Alfred Hospital Allergy Unit as well as at her private practice in the Inner West of Sydney. Kirsty works with both adults and paediatrics and is skilled in complex case management. Kirsty has also contributed to the development of the RPAH Food Intolerance Handbooks, mentors dietitians in adverse food reactions, and is the Adverse Food Reactions Interest Group National Convenor.

Neelam Pun (BSc Nutr Hons, APD, AN) is an Accredited Practising Dietitian with 10 years’ experience working in the adverse food reactions space. She supports patients at the Royal Prince Alfred Hospital Allergy Unit with food allergies, food intolerances, Eosinophilic Oesophagitis and other associated conditions. Additionally, she works in the hospital inpatient setting. Neelam is experienced at presenting to other healthcare professionals, student dietitians and the public. She has also contributed to the development of the RPAH Food Intolerance Handbooks and Friendly Food cookbook, mentors dietitians in adverse food reactions and is a member of the Adverse Food Reactions Interest Group leadership committee.

Sharon Trueman (BSc, Post Grad Dip Nutr & Diet, APD, AN) is an Accredited Practising Dietitian with more than 23 years' experience working with babies, children, and adults in the area of food intolerances, food allergy and other adverse food reactions. She works part-time at the Royal Prince Alfred Hospital Allergy Unit and as senior dietitian at Nepean Hospital, as well as running two busy private practices in the Blue Mountains of west Sydney. Sharon has contributed to the development of the RPAH Food Intolerance Handbooks, mentors dietitians in both food allergy and food intolerances and is the CPD Coordinator of the Adverse Food Reactions Interest Group (AFRIG).

Dr. Robert Loblay (MB BS, PhD, FRACP) is a Clinical Immunologist, and has been Director of the Allergy Unit in the Department of Clinical Immunology at Sydney's Royal Prince Alfred Hospital for 35 years. He has a special interest in food intolerance, food allergy and diet-related gastrointestinal conditions. Rob is co-author of the book Friendly Food and the RPAH Food Intolerance Handbooks.
